Matcha chia pudding

What is Matcha?

Matcha is a powdered green tea, where rather than brewing the dried leaves in hot water, you are actually drinking the ground up tea leaves. Matcha powder has a ton of health benefits and antioxidants in it. It does have caffeine, and can offer you a little caffeine boost, without the traditional crash that many people get from drinking coffee

There are many different types/qualities of matcha for a wide variety of prices. Typically, you will want to choose a higher quality matcha if you’ll be using it for just drinking, and can use a slightly lower quality matcha in baking.

One important thing to look out for when choosing matcha is the colour. The matcha tea should have a nice bright green colour. I found this guide helpful for selecting a high-quality matcha tea!

A few notes on the recipe:

The base of the recipe starts with (of course) chia seeds and plant-based milk. I like to use a mix of homemade almond milk and coconut milk for this recipe to really give it a rich and creamy consistency. Since coconut milk has a higher fat content, it gives the chia pudding a rich texture. If you prefer, you can use all almond milk in the recipe instead.

This matcha latte chia pudding can be prepared a night in advance before you want to enjoy it, or at least an hour before. You’ll want to make sure to whisk up the chia pudding really well before letting it sit to gel. If the chia pudding mixture becomes too thick if you let it sit overnight, simply add a bit more almond milk.

Here are some killer topping options to eat with this chia pudding:

  • Whipped coconut cream (or coconut yogurt)

  • Matcha powder

  • Blueberries

  • Bananas

  • Toasted slivered almonds
